Our talented new teachers, Chef Strother and assistant  Ms. Tee,  explained the science behind a good hamburger, as well as the science behind cooking a good steak.  Then, students were able to use their knife skills to prep vegetables, meat and buns before crafting, cooking and building delicious burgers in the Culinary Kitchen at the CTC!

According to our instructors, it's all about the The Maillard Reaction. This  process utilizes the chemical reaction that occurs in the presence of heat between amino acids and reducing sugars that results in food browning thereby producing fresh aromas and flavors. The building blocks of proteins which can be contained in our diet are amino acids.

Students from this pathway not only have the opportunity to learn the art of cooking and baking, but can gain their Food Handlers Permit, ServSafe Manager certification and their Commercial Foods certification. To learn more about the Culinary Arts program, visit: Culinary Arts at CTC
